Salted caramel sauce


100g caster sugar
100ml 18% single cream
50g salted butter
2g Maldon sea salt


  1. Add the sugar to a clean stainless steel pan. Add a medium heat cook carefully until an amber caramel is achieved.
  2. Pour in the cream and stir to combine.
  3. Remove from the heat, add a good pinch of salt and leave to cool for 5 minutes before adding the butter and stirring until melted.
  4. Leave to cool before serving.
  5. This is great poured over a sticky toffee pudding or apple crumble.
